Don’t Just Freeze It, Blast It!

Blast freezing is the way modern production facilities freeze and preserve significant volumes of product, making them safer to consume even months afterward. This technology allows food manufacturers to bypass the crystallization process of traditional freezing, and get product temperatures cold, without losing quality. The Science Behind Blast Freezing

Blast freezing started in 1929 thanks to the innovative efforts of Clarence Birdseye, who discovered how to blast or flash freeze meat rapidly.

He learned the secret to this by watching the way fish in frigid waters would freeze exceptionally fast, but once they thawed, they still maintained their malleable texture. The reason it works that way is because blast freezing doesn’t allow ice crystals enough time to form (as they would during slow freezing).

This means that those same crystals won’t melt (upon thawing) and affect flesh texture. With traditional freezing (especially with wet ice), you always have that problem, which is a substantial hindrance to product shelf life.

How cold do you have to get it to “blast” freeze products?

Modern blast freezers can freeze products down to -10 or -20 degrees Fahrenheit, giving them the chance to last several months to a year. By doing so, it ensures product quality even in the summer or during long transit routes.
